Oh how I love Monday! Why?
because Monday is my Sabbath..lol
I don't do anything purposefully: no field trip, no homeschooling session, absolutely no demands of doing things....I purposely empty my to do lists on Monday... just relax, chillax, enjoy my day, and pause....
Today's Monday started with cooking Soto Ayam in the morning....yeay!
Cooking is a passion for me, so it is not considered a task lol...
Love the aroma of santan (fresh coconut milk) poured in my soto ayam...smells terrific!
Yeay gonna share the recipe in this blog post:
Ingredients:
A whole organic chicken (700-1 kg in weight), cut into 12 parts
Grind these items in a mortar:
I use the Indonesian "gulekan" ...lol, Javanese style mortar made from stone, bought it in Jogjakarta, a must have in every home here...very useful and very handy too..
The ingredients to grind:
-6 cloves of garlic, peel the skin
-6 shallots, peel the skin
-6 candlenuts
-4 cm of turmeric, peel the skin
-3 cm of ginger, peel the skin
-6 peppercorn seed
added 4 Indonesian bay leaves (daun salam) and 4 kaffir lime leaves(daun jeruk) ,also 2 stems of lemongrass, and around 3 cm of galangal (I love this part: hit the bottom white part of the lemongrass and the galangal too, really hard with your pestle. Just imagine somebody really irritating and hit hard on the lemongrass and galangal....a really good therapy for negative emotion outlet...yeay lol :))
use 3 tablespoon of coconut oil to stir fry until the aroma feels the air...
After the smell of your soup is so mouth watery, put the pieces of chicken inside your pot...
Add 2 Litres of filtered water , and add in also 250 ml of fresh coconut milk. Add in also 1 tsp of sea salt and 3 tablespoon of brown sugar.
Wait until it simmers and taste it , if you feel like it needs more salt or sugar, adding it accordingly to suit your tongue! :)
Last but not least: add finely chopped celery and leek into it... :)
Addition: you may eat this soup with boiled egg too...

I am currently doing GAPS diet for my son, and this recipe is also GAPS proven, except the brown sugar, you can omit it to make it sugar free...
